etc. is chef Deb Paquette's Green Hills restaurant on Bedford Avenue, part of local group 4Top Hospitality (Char, Amerigo, Jasper's, etch). Paquette was the first woman in Tennessee to qualify as a certified executive chef, and the menu runs global: Vietnamese short rib, sesame cured salmon, bacon duo. There are 70 seats, a cocktail bar for about a dozen, and a patio. Happy hour is at the bar, 4-6:30 PM, with $5 drafts, $7 wines, $9 craft cocktails and $5 bites, and a shorter mid-day menu runs weekdays 2-4 PM.
