The Pink Hermit is the Hermitage Hotel's European-style cafe and wine bar on the corner of 6th Avenue and Union, with a Jean-Georges menu of pastries, wood-fired pizzas, pastas and Italian small plates like warm baked olives and calamari fritti. It's open 6 AM to 9 PM daily. 'Aperitivo Hour' starts at 11 AM with $12 spritzes (Aperol, pink grapefruit, Hugo), $14 cocktails like an espresso martini or paper plane, and $2 off select wines, and from 4 to 6 PM it joins the hotel's 1910 Hour with a $19.10 sparkling rosé and strawberry sorbet pairing.
